Servings: 6

Ingredients:

Ingredient Quantity
Water 400g
Sugar 100g
Lemon juice 35g
Raspberries 100g
Strawberries 100g
Wild strawberries 100g
Blueberries 100g

Instructions:

  1. To begin, place the raspberries, wild strawberries, and blueberries into a large bowl. These vibrant berries will form the base of your delightful sorbet.

  2. Squeeze the juice from a fresh lemon, making sure to strain it well using a fine mesh strainer to remove any seeds. Add the filtered lemon juice to the fruit in the bowl.

  3. Sprinkle the sugar over the fruit and lemon mixture, then pour in the water to bring everything together. The sugar will help balance the tartness of the fruit and lemon juice, making for a refreshing and sweet sorbet.

  4. Use an immersion blender or a regular blender to blend the mixture until smooth and well combined. The result should be a velvety, homogenous puree of berries.

  5. If you have an ice cream maker, pour the mixture into the machine and churn for about 30 minutes. This will create a smooth, creamy sorbet with just the right texture.

  6. No ice cream maker? No problem! Simply pour the blended mixture into a shallow dish and place it in the freezer. Every 30 minutes, take the dish out of the freezer and stir it vigorously with a fork to break up any ice crystals. Repeat this process for about 1 hour or until the sorbet reaches a creamy, scoopable consistency.

  7. Once your sorbet has achieved the desired consistency, scoop it into serving bowls or cones. Serve immediately for the best texture, or store in the freezer for later enjoyment.

This Mixed Berry Sorbet is the perfect treat to cool off on a warm day, offering a burst of fruity flavors with every spoonful.
