Instructions

  1. Prepare the Mango:
    Start by washing and peeling the raw mango. Grate the mango finely and set it aside for later use.

  2. Whisk the Yogurt:
    Take the curd (yogurt) in a mixing bowl and whisk it until it becomes smooth and creamy.

  3. Combine Ingredients:
    To the smooth yogurt, add the grated raw mango, salt, red chili powder, and cumin powder. Mix thoroughly to ensure the ingredients are evenly distributed. Taste the mixture and adjust the salt and seasoning if needed.

  4. Prepare the Tadka (Seasoning):
    Heat the oil in a small tadka pan over medium heat. Once the oil is warm, add a pinch of asafoetida (hing) and sauté it for a few seconds until fragrant.
    Next, add the mustard seeds and let them crackle. Immediately add the curry leaves and allow them to crackle as well. Once the seasoning is ready, turn off the heat.

  5. Combine and Serve:
