Ingredients

Ingredient Quantity
Strawberries 400g
Water 500g
Sugar 120g
Lemon juice 30g
Fresh liquid cream to taste
Powdered sugar to taste
Fresh mint to taste
Whole strawberries for garnish

Instructions

  1. Prepare the Sugar Syrup:
Begin by making a sugar syrup. In a small pot, combine the water and sugar. Heat gently, stirring until the sugar dissolves. Once done, remove the pot from the heat and let it cool to room temperature.

  2. Prepare the Strawberries:
While the syrup is cooling, wash the strawberries thoroughly, remove the stems, and cut them into quarters. Transfer the cut strawberries into a food processor or blender and pulse until you have a smooth puree.

  3. Combine the Lemon Juice and Strawberry Puree:
Squeeze the juice from the lemon and add it to the strawberry puree. Stir well to ensure the lemon is fully incorporated into the mixture.

  4. Freeze the Granita Mixture:
Pour the strawberry and lemon mixture into a shallow glass dish or a suitable freezer-safe container. Place the container in the freezer. Every 30 minutes, take a fork and scrape the mixture to create a flaky, icy texture. Repeat this process for at least 4 hours, or until the granita is fully frozen and light and fluffy in texture.

  5. Whip the Cream:
In a chilled bowl, pour the fresh cream. Using an electric mixer, beat the cream until soft peaks form. Once the cream starts to thicken, add powdered sugar to taste and continue whipping until you reach a stiff consistency.

  6. Prepare the Garnish:
Take whole strawberries and slice them thinly lengthwise, making cuts about 3-4 mm apart, but leave the stems intact to keep the slices held together. This will create a lovely fan-like effect for your garnishing.

  7. Assemble the Granita:
To serve, scoop the icy strawberry granita into individual glass cups. Top each serving with a generous spoonful of whipped cream. Fan out a slice of strawberry on top for a stunning visual effect. Finally, garnish with a sprig of fresh mint for an added touch of color and flavor.

  8. Enjoy:
Your refreshing Strawberry Granita is now ready to be enjoyed! It’s the perfect dessert to beat the heat and impress your guests with both its vibrant flavor and its presentation.

This Strawberry Granita is not just a treat for the taste buds but a feast for the eyes as well. With its bright color, delicate texture, and fresh toppings, it’s sure to become a favorite in your summer dessert repertoire. Enjoy the cool, fruity goodness and the creamy finish as you savor every spoonful!
