Ingredient Quantity
Watermelon (pureed) 1/2 medium watermelon
Sugar syrup 140 ml
Lemon juice 3 tablespoons
Mint leaves (Pudina) 1/2 bunch, torn
Tequila 150 ml
Triple sec 70 ml
Lemon wedges & mint leaves For garnish

Preparation Time:

15 minutes

Cooking Time:

0 minutes

Total Time:

15 minutes + Freezing time (approximately 6 hours)

Instructions:

  1. Prepare the Watermelon:
Start by cutting the watermelon in half, removing the seeds, and pureeing the flesh in a blender or food processor until smooth. Once pureed, strain the mixture through a fine mesh sieve to remove any excess pulp. Pour the strained juice into a large mixing bowl.

  2. Mix the Ingredients:
Add the sugar syrup, fresh lemon juice, and torn mint leaves to the watermelon puree. Pour in the tequila and triple sec, and stir the mixture well to ensure all the ingredients are fully incorporated. Taste and adjust the sweetness or alcohol levels according to your preference.

  3. Freeze the Granita:
Pour the mixture into a freezer-safe container. Cover with plastic wrap and place it in the freezer. After about two hours, use a fork to scrape the mixture. Return the granita to the freezer and repeat this process every 2-3 hours for the next 6 hours, or until the granita is fully frozen and resembles fluffy, shaved ice.

  4. Serve:
Once the granita is ready, scoop it into chilled glasses. For an extra kick, drizzle a little more tequila on top. Garnish with a small watermelon sphere, a wedge of lemon, and a sprig of mint for a refreshing finish.

  5. Pairing Suggestions:
Serve this delightful Watermelon Margarita Granita alongside a fun Mexican-inspired party menu, such as Loaded Veggie Nachos, a Mexican Vegetarian Burrito Bowl, and crispy Churros with Cinnamon & Sugar. This combination is guaranteed to elevate any gathering!

Notes:

  • Always serve this granita to guests 21 years and older, as it contains alcohol.
  • If you don’t have fresh mint, you can substitute with a small handful of mint extract, but fresh mint adds a lovely aromatic quality that pairs perfectly with the watermelon.

Enjoy this icy, boozy treat as the perfect side dish or dessert to cool off on a warm summer evening or to kick off a weekend celebration with friends!
