Prepare the Watermelon: Start by cutting a fresh watermelon in half and then into slices. Remove the rind and scoop out 600g of the juicy flesh. For a smoother texture, feel free to remove any seeds before proceeding.

Blend and Strain: Place the watermelon flesh into a blender or food processor and blend until smooth. Once blended, pass the mixture through a fine sieve to eliminate any leftover bits and seeds, leaving you with a smooth watermelon puree.

Prepare the Sugar Syrup: In a separate saucepan, combine the water and sugar. Heat the mixture over medium heat, stirring occasionally, until the sugar has completely dissolved. Once dissolved, bring the syrup to a boil and let it cook for about 5 minutes. Afterward, remove it from the heat and let it cool to room temperature.

Chill the Mixtures: Transfer the watermelon puree and the sugar syrup to separate bowls. Place both in the refrigerator for at least 30 minutes, or until they are nice and cold.

Add Lemon Juice: While the watermelon and syrup are chilling, juice a lemon and pass the juice through a strainer to remove any seeds or pulp. Add the strained lemon juice to the chilled watermelon puree.
