Instructions:
- Start by slicing the watermelon into thick pieces. Remove the rind and chop the watermelon into cubes.
- Blend the watermelon pieces until smooth to create a purée.
- Use a fine mesh strainer to filter the purée, separating the juice from any pulp.
- Stir the watermelon juice and pour it into popsicle molds. Secure the lids of the molds and insert sticks, securing them in place with small wooden clips to ensure they don’t slide down.
- Place the molds in the freezer and let them chill for 2-3 hours to set.
For the Yogurt Layer:
