Simple Tongseng Sapi Recipe
Ingredients:
- 500 grams beef, boiled and set aside, then cut into cubes
- Cabbage, coarsely chopped (quantity to taste)
- 1 tomato, cut into wedges
- Green onions, sliced diagonally (quantity to taste)
- Sweet soy sauce (kecap manis), 5-6 tablespoons
- 200 ml coconut milk (for a richer flavor, use Bumas brand)
- 6 bird’s eye chilies, sliced diagonally
- Salt, sugar, and Royco seasoning (to taste)
Ground Spices:
- 7 shallots
- 5 garlic cloves
- 3 red curly chilies
- 1 piece of ginger
- 1 teaspoon coriander seeds
- 1 teaspoon whole black pepper
Additional Spices:
- 2 bay leaves
- 3-5 kaffir lime leaves
- 1 piece of galangal, smashed
- 1 stalk lemongrass, smashed
- Instant gulai spice mix (optional)
Steps:
-
Sauté the Ground Spices: Begin by sautéing the ground spices until they release a fragrant aroma. If desired, you can also add a bit of instant gulai spice mix for extra flavor.
-
Add Additional Spices: Incorporate the bay leaves, kaffir lime leaves, galangal, and lemongrass into the pan.
-
Cook the Beef: Add the beef cubes to the pan. Pour in enough water to cover the beef (you can use the beef broth from boiling or fresh water). Stir and let it come to a boil.
-
Add Coconut Milk: Once the mixture begins to boil, add the coconut milk. Stir well to combine and prevent the coconut milk from curdling. Season with salt, sugar, Royco seasoning, and sweet soy sauce. Allow it to boil again.
-
Incorporate Vegetables: Add the chopped cabbage and sliced bird’s eye chilies to the pot. Let it simmer until the cabbage is tender.
-
Finish with Tomato and Green Onions: When the dish is almost done, add the tomato wedges and sliced green onions. Cook until everything is well combined and heated through.
-
Serve: Once the dish is fully cooked and the flavors are melded together, remove from heat. Serve hot, garnished with fried shallots on top if desired.
