Ricotta and Pear Fritters (Frittelle Ricotta e Pere)

Whole milk 150g
Ricotta cheese 100g
Granulated sugar 30g
Pears (peeled and diced) 180g
Fresh brewer’s yeast 6g

Instructions:

  1. Prepare the Dough:

    • Begin by gently heating the whole milk in a small saucepan until it is lukewarm. Remove from heat once the desired temperature is reached.
    • In a large mixing bowl, add the fresh yeast to the warm milk, allowing it to dissolve completely.
    • Gradually incorporate the flour into the milk mixture in 3-4 additions, whisking continuously to prevent any lumps from forming. The result should be a thick, smooth batter.
    • Stir in the ricotta cheese and a pinch of fine salt, mixing well until fully combined.
  2. Prepare the Pears:

    • Peel the pears and cut them into quarters. Remove the cores and seeds, then dice the pear into small cubes.
    • Fold the diced pears gently into the batter, ensuring they are evenly distributed.
  3. Let the Dough Rise:

    • Cover the bowl with plastic wrap and place it in a warm, draft-free space. An ideal spot is inside an oven with only the light turned on. Allow the batter to rise for approximately 2 hours, or until it has doubled in size.
  4. Fry the Fritters:

    • After the dough has risen, heat the peanut oil in a deep pan or saucepan over medium heat until it reaches a temperature of around 170°C (340°F).
    • Using two spoons, carefully drop spoonfuls of the batter into the hot oil. Fry 4-5 fritters at a time, turning them frequently to ensure they cook evenly on all sides.
    • Once the fritters are golden brown and crisp (about 5 minutes), remove them from the oil and drain on paper towels.
  5. Coat with Sugar:

    • While the fritters are still warm, roll them in additional granulated sugar to coat them lightly.
  6. Serve and Enjoy:

    • Serve the ricotta and pear fritters warm, as a delightful treat for any occasion.
