Ridge Gourd Chutney (Turai Ki Chutney) Recipe
Description: Chutneys are a staple in every household, often served alongside meals. While coriander and mint chutneys are very popular in North India, South India boasts a variety of chutneys, including this flavorful Ridge Gourd Chutney. This chutney pairs perfectly with breakfast or any meal and adds a unique taste to your dishes.

Ingredients:
- 2 Ridge gourds (Turai)
- 3 Green chilies
- 8 Curry leaves
- 1 small spoon tamarind (seedless)
- 1 tbsp Chana dal (split chickpeas)
- 1/2 tsp Mustard seeds (Rai)
- 3 Dry red chilies
- 1/2 tsp Fenugreek seeds (Methi)
- 1/4 tsp Turmeric powder
- 2 tbsp Oil
- Salt, to taste
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Instructions:
- Wash the ridge gourds thoroughly and cut them into small pieces. You can peel them if you prefer.
- Heat oil in a pan. Add chana dal and cook until golden brown.
- Add the ridge gourd, curry leaves, green chilies, turmeric powder, and salt to the pan. Stir well, cover the pan, and let it cook for 8-10 minutes.
- Turn off the heat and allow the mixture to cool.
- In another pan, heat a little oil and add mustard seeds, fenugreek seeds, and dry red chilies. Roast them for 3-4 minutes.
- Add the roasted ingredients to a mixer grinder and grind them into a smooth paste.
- Add the cooled ridge gourd mixture to the grinder and blend everything together.
- Transfer the chutney into a bowl and serve.
