Ridge Gourd Chutney (Turai Ki Chutney) Recipe

Description: Chutneys are a staple in every household, often served alongside meals. While coriander and mint chutneys are very popular in North India, South India boasts a variety of chutneys, including this flavorful Ridge Gourd Chutney. This chutney pairs perfectly with breakfast or any meal and adds a unique taste to your dishes.

Ingredients:

  • 2 Ridge gourds (Turai)
  • 3 Green chilies
  • 8 Curry leaves
  • 1 small spoon tamarind (seedless)
  • 1 tbsp Chana dal (split chickpeas)
  • 1/2 tsp Mustard seeds (Rai)
  • 3 Dry red chilies
  • 1/2 tsp Fenugreek seeds (Methi)
  • 1/4 tsp Turmeric powder
  • 2 tbsp Oil
  • Salt, to taste

Preparation Time: 5 minutes

Cooking Time: 15 minutes

Instructions:

  1. Wash the ridge gourds thoroughly and cut them into small pieces. You can peel them if you prefer.
  2. Heat oil in a pan. Add chana dal and cook until golden brown.
  3. Add the ridge gourd, curry leaves, green chilies, turmeric powder, and salt to the pan. Stir well, cover the pan, and let it cook for 8-10 minutes.
  4. Turn off the heat and allow the mixture to cool.
  5. In another pan, heat a little oil and add mustard seeds, fenugreek seeds, and dry red chilies. Roast them for 3-4 minutes.
  6. Add the roasted ingredients to a mixer grinder and grind them into a smooth paste.
  7. Add the cooled ridge gourd mixture to the grinder and blend everything together.
  8. Transfer the chutney into a bowl and serve.
