Season the Turkey
Begin by lightly salting the turkey breast. Massage the salt into the meat to ensure it is evenly seasoned. -
Prepare the Speck
Lay half of the speck slices on a cutting board, slightly overlapping each piece. Place the remaining speck slices on top of the first layer, again overlapping them to cover the turkey breast completely. -
Tie the Turkey
Take a long piece of kitchen twine and form a large loop. Wrap the twine twice around itself before passing it under the turkey breast, pulling it tightly to create a secure ring around the meat. Repeat this process in intervals, moving slightly along the length of the turkey breast, tightening the twine each time. Insert a few sprigs of fresh rosemary between the twine to infuse flavor during cooking. -
Sear the Turkey
Heat the olive oil and butter in a large pan over medium heat. Once hot, add the turkey breast, placing a few sprigs of rosemary and sage leaves on top of the meat. Let it sear for about 5 minutes, ensuring a nice golden crust forms on all sides. -
Deglaze and Simmer
After searing the turkey, pour in the white wine and vegetable broth, stirring to deglaze the pan. Cover the pan and let the turkey simmer for 5 minutes to absorb the flavors. -
Preheat Oven
While the turkey is simmering, preheat the oven to 170°C (340°F). -
Transfer to the Oven
Once the turkey has finished simmering, transfer it to a baking dish. Place it in the preheated oven and roast for 1 hour, or until the turkey is cooked through and the internal temperature reaches 75°C (165°F). -
Prepare the Sauce
While the turkey is roasting, return the pan to the stove over low heat. Whisk in the flour and let the sauce thicken, stirring constantly for 4-5 minutes. The sauce should become smooth and glossy. -
Rest and Slice
Once the turkey is done, remove it from the oven and carefully cut away the kitchen twine. Slice the turkey breast into thick, juicy pieces. -
