Ingredients:

Quantity Ingredient
2 Heads of garlic
2 1/2 Tbsp. olive oil
1/4 Cup water
3 Tbsp. fresh lemon juice
2 Racks of lamb
1/2 Tsp. salt
1/2 Tsp. pepper
1 1/2 Cups fresh bread crumbs
3 Tbsp. unsalted butter

Instructions:

  1. Preheat an oven to 400°F (200°C).
  2. Prepare the garlic heads by discarding excess papery skin and placing them in a small baking dish.
  3. Drizzle 1/2 tablespoon of olive oil and water over the garlic heads.
  4. Cover the baking dish with aluminum foil and bake for approximately 45 minutes until the garlic is soft.
  5. Allow the garlic to cool slightly, then separate the cloves and squeeze the pulp into a small bowl, discarding the skins.
  6. Whisk in the remaining olive oil, lemon juice, mustard, and 1/2 teaspoon each of salt and pepper.
  7. Season the bread crumbs with salt and pepper in another bowl.
  8. Place the racks of lamb in a roasting pan, fat side up, and roast for 10 minutes in the preheated oven.
  9. Remove the lamb from the oven and rub the garlic mixture over the fat side of each rack.
  10. Spread the seasoned bread crumbs over the garlic mixture and drizzle with melted butter.
  11. Return the lamb to the oven and continue to roast until the crumbs are lightly golden and the internal temperature reaches 130°F – 135°F (54°C – 57°C) for medium-rare, about 25 minutes more.
  12. Remove the lamb from the oven, cover with aluminum foil, and let it rest for 10 minutes.
  13. Preheat the broiler.
  14. Uncover the lamb and place the roasting pan under the broiler, 5-6 inches from the heat source.
  15. Broil the lamb racks until the crumbs are deep golden brown, approximately 30-60 seconds.
  16. To serve, place the racks on a cutting board and slice between the ribs. Arrange 2 or 3 ribs on each warmed individual plate.
