Instructions
- Preheat your oven to 400°F (200°C).
- Carefully slice about 1/4 inch off the top of the garlic bulbs, exposing the cloves.
- In an oven-proof dish, pour the chicken broth and position the garlic bulbs atop the broth. Sprinkle with thyme, rosemary, and fresh ground pepper to enhance the flavors.
- Cover the dish tightly with tin foil to retain moisture.
- In a separate oven-proof dish, halve the grape tomatoes and drizzle 1 tablespoon of olive oil over them. Cover this dish with foil as well.
- Place both dishes in the preheated oven and roast for 1 hour and 15 minutes, checking on the garlic occasionally. If it appears to be drying out, add a little more chicken broth.
- After the initial roasting, uncover both dishes and allow them to roast for an additional 10 minutes for a nice caramelization.
- Once finished, remove both dishes from the oven and let them cool slightly.
- In a large pot, fill with hot water and add about 1 tablespoon of olive oil. Bring the water to a boil.
- Add the angel hair pasta to the boiling water and cook until tender, approximately 10 minutes. Drain the pasta, returning it to the pot.
- Once the garlic is cool enough to handle, squeeze the softened cloves into a food processor. Add the roasted tomatoes, Italian seasoning, evaporated milk, parmesan cheese, and season with salt and pepper to taste.
- Process the mixture for about two minutes until smooth and creamy.
- Pour the sauce over the drained pasta and stir well to ensure an even coating.
- Serve immediately, passing extra parmesan cheese for sprinkling on each individual serving for added flavor.
