This comforting Roasted Tomato Basil Soup is my take on a recipe I found on Barefoot Contessa’s site. Though I couldn’t track down the original version online, I decided to create my own, and the result was delicious! With roasted tomatoes, aromatic basil, and a velvety smooth texture, this soup is perfect for a chilly evening or a light lunch. Plus, it’s low in cholesterol and protein, making it an ideal healthy option.

Instructions

  1. Preheat the oven to 350°F (175°C).
Get the oven ready to roast the tomatoes to bring out their natural sweetness and depth of flavor.

  2. Prepare the tomatoes:
Cut the grape tomatoes in half (if using larger tomatoes, cut them into smaller chunks). Arrange them on a baking sheet in a single layer for even roasting.

  3. Season the tomatoes:
Drizzle the tomatoes with extra virgin olive oil, and then sprinkle with salt and pepper. This step helps enhance the natural sweetness of the tomatoes during roasting.

  4. Add the garlic:
Place the whole garlic cloves on the baking sheet alongside the tomatoes. The garlic will mellow and caramelize as it roasts, infusing the soup with a rich, savory flavor.

  5. Roast in the oven:
Roast the tomatoes and garlic in the preheated oven for about 45 minutes to 1 hour, or until the tomatoes are tender and bursting with juices. The garlic should be soft and fragrant at this point.

  6. Blend the roasted ingredients:
Remove the baking sheet from the oven and transfer the roasted tomatoes and garlic to a blender. Add the fresh basil leaves and blend everything together until smooth. The basil will add a fragrant, herbaceous note to the soup.

  7. Prepare the soup base:
In a large soup pot, heat the extra virgin olive oil and butter over medium heat. Add the chopped onions and cook for a couple of minutes, stirring occasionally, until the onions are soft and translucent.

  8. Season with red pepper flakes:
Sprinkle in the red pepper flakes for a slight kick of heat that complements the sweetness of the roasted tomatoes.

  9. Incorporate the flour:
Add the all-purpose flour to the onions, stirring constantly with a spatula or wooden spoon to prevent lumps from forming. Cook for about a minute, allowing the raw flour taste to cook off.

  10. Add the liquids:
Pour in the vegetable broth and milk, stirring the mixture to combine. Let the soup base simmer for a few more minutes to allow the flavors to meld together.

  11. Combine and finish the soup:
Pour the blended tomato and basil mixture into the soup pot with the broth and milk. Stir everything together, then let the soup simmer for another 5-10 minutes to ensure it’s heated through.

  12. Serve:
Ladle the hot soup into bowls and serve immediately, garnished with extra fresh basil leaves if desired. Pair with a slice of crusty bread for a truly satisfying meal.

Cooking Tips:

  • For a creamier texture, you can substitute part or all of the milk with heavy cream.
  • If you prefer a spicier soup, increase the amount of red pepper flakes or add a pinch of cayenne pepper for an extra kick.
  • Feel free to customize the soup with other herbs, such as thyme or oregano, to add your own twist.

This Roasted Tomato Basil Soup is perfect for those who appreciate the simple, robust flavors of fresh tomatoes and basil. The roasting process brings out the tomatoes’ natural sweetness, while the basil adds an herbal freshness, creating a well-balanced and comforting soup. It’s an easy-to-make recipe that’s as delicious as it is healthy. Enjoy it with your family or as a treat on your own—either way, you won’t be disappointed!
