- 3 cloves garlic
- 3/4 cup grated Parmesan cheese
Instructions:
1. Preheat and Prepare:
- Preheat your oven to 450ยฐF (230ยฐC).
- Spray a large roasting pan with nonstick spray to ensure the vegetables don’t stick during roasting.
2. Roast the Vegetables:
- In the prepared roasting pan, combine the red bell peppers (sliced), eggplants (cubed), crookneck squash (sliced), and butternut squash (cubed).
- Drizzle the vegetables with 3 tablespoons of olive oil and sprinkle them with salt and pepper to taste.
- Toss the vegetables gently to coat them evenly with oil and seasoning.
- Roast the vegetables in the preheated oven until they are tender and beginning to brown, stirring occasionally. This usually takes about 25 minutes, but keep an eye on them to prevent burning.
3. Cook the Pasta:
- Meanwhile, in a large pot, bring salted water to a boil.
- Cook the penne pasta in the boiling water until it is tender but still firm to the bite.
- Once cooked, drain the pasta but remember to reserve 3/4 cup of the cooking liquid. This liquid will help moisten the pasta later.

- In a large bowl, combine the cooked pasta, roasted vegetables, diced tomatoes, and torn fresh basil leaves.
- Add the remaining 3 tablespoons of olive oil, dried basil, minced garlic, and vinegar to the bowl.

- If the pasta seems dry, add the reserved cooking liquid a tablespoon at a time until you reach your desired consistency.
