Instructions:

  1. Prepare the Shrimp Base:

    • In a large saucepan, heat 2 tablespoons of extra virgin olive oil and a small knob of butter over medium heat.
    • Add half of the onion, finely chopped, and a few sprigs of fresh thyme. Sautรฉ until the onion becomes soft and golden.
    • Add the peeled shrimp to the pan, allowing them to sear for a few minutes. Stir occasionally to ensure even cooking.
    • Once the shrimp are lightly golden, add the cognac. Allow it to cook for a minute or so until the alcohol evaporates. Season with salt to taste.

  2. Cook the Risotto:

    • In another large pan, heat the remaining 2 tablespoons of olive oil and the rest of the butter. Add the other half of the onion, finely chopped, and sautรฉ it until it turns golden brown.
    • Add the Carnaroli rice to the pan, stirring to coat the grains with the oil and butter mixture. Let the rice toast for 2-3 minutes, enhancing its nutty aroma.
    • Once the rice is toasted, pour in the white wine and let it evaporate, stirring occasionally.
    • Begin adding the hot fish stock, one ladle at a time, allowing the rice to absorb the liquid before adding more. Stir often to help the rice cook evenly.
    • Continue adding the stock until the rice is al dente, which should take around 15-18 minutes.
  3. Final Touches:

    • When the risotto is almost done, stir in the ground chili powder to add a slight kick, adjusting the amount to your taste.
    • Add the shrimp and tomato sauce mixture to the risotto. Mix gently, ensuring the seafood flavors infuse the rice.
    • Remove the pan from the heat. Stir in a knob of butter for extra creaminess and add the fresh cream. Stir until the risotto becomes rich and velvety.
