- Begin by slicing the onions thickly and placing them on a plate. Place the thinly sliced garlic cloves beside them and set aside.
- Chop the remaining vegetables and place them in a separate bowl.
- If your beef is not already cubed, cube it now.

Coating the Beef:
- In a clean plastic bag, combine the flour, salt, and pepper.
- Shake the beef cubes in the flour mixture until each piece is lightly coated.

Preheating:
- Preheat your oven to 300Β°F (150Β°C).

Cooking:
- Heat a large Dutch oven over high heat and lightly coat the bottom with olive oil.
- Brown the beef cubes in batches, removing them to a plate as they brown.
- Add more olive oil to the pot as needed.
- Once all the beef is browned, add the onions to the pot and cook for about a minute.
- Then, add the garlic slices and cook for another minute.
- Reduce the heat to medium and add about 1/2 cup of beef stock and half of the red wine.
