Total Time: 3 hours and 40 minutes

Description:

Discover the subtle “wee kick” that a can of Rotel adds to this hearty beef stew. Originating from a happy accident when regular canned tomatoes were absent, but Rotel was on hand, this stew brings a pleasant hint of heat, setting it apart from traditional recipes. However, if you prefer a classic beef stew, feel free to omit the Rotel for an equally satisfying dish.

Ingredients:

Ingredient Quantity
Onions 2
Garlic cloves 2
Carrots 2
Celery ribs 2
Mushrooms 8
Flour 1/4 cup
Salt 1/4 tsp
Fresh ground black pepper 1/4 tsp
Stewing beef 2 lbs
Olive oil 3 tbsp
Red wine 2 cups
Diced tomatoes with green chilies 1 can (14.5 oz)
Bouquet garni spice 2 tsp

Instructions:

  1. Preparation:

    • Begin by slicing the onions thickly and placing them on a plate. Place the thinly sliced garlic cloves beside them and set aside.
    • Chop the remaining vegetables and place them in a separate bowl.
    • If your beef is not already cubed, cube it now.
  2. Coating the Beef:

    • In a clean plastic bag, combine the flour, salt, and pepper.
    • Shake the beef cubes in the flour mixture until each piece is lightly coated.
  3. Preheating:

    • Preheat your oven to 300Β°F (150Β°C).
  4. Cooking:

    • Heat a large Dutch oven over high heat and lightly coat the bottom with olive oil.
    • Brown the beef cubes in batches, removing them to a plate as they brown.
    • Add more olive oil to the pot as needed.
    • Once all the beef is browned, add the onions to the pot and cook for about a minute.
    • Then, add the garlic slices and cook for another minute.
    • Reduce the heat to medium and add about 1/2 cup of beef stock and half of the red wine.
    • Let it bubble while stirring constantly to dissolve all the brown bits from the bottom of the pan.
  5. Combining Ingredients:

    • Add all the remaining ingredients to the pot, including the browned beef.
    • Stir well to combine.
  6. Baking:

    • Cover the pot with a lid and place it in the middle of the preheated oven.
    • Cook for a minimum of two hours (three hours for even better results) until the beef is very tender.
    • Stir the stew once every hour.
    • After two hours, taste the stew and add a sprinkle of salt if desired.
  7. Finishing Touches:

    • Once done, you can serve the stew as it is.
    • If you prefer a thicker consistency, you can thicken it on the stovetop with a little flour-water mixture according to your preference.

Enjoy this hearty and flavorful Wee Kick Beef Stew, perfect for warming up chilly winter nights or impressing guests at your next potluck gathering!
