Roshan Di Kesar Pista Kulfi 🍨

Description: Wonderful dessert for the hot summer months! This recipe was first enjoyed by Mughal emperors in the 16th century! 😋

Ingredients:

Quantity Ingredient
4 cups Full-cream milk
1/2 tsp Saffron
6 tbsp Sugar
2 pods Green cardamoms
1/4 cup Pistachios
2 tbsp Cornflour
1 tbsp Arrowroot
2 cups Water

Instructions:

  1. Boil the Milk:

    • In a sturdy saucepan, bring the full-cream milk to a gentle boil over medium flame.
    • Allow it to simmer until it reduces to half its volume, stirring occasionally for about 20-25 minutes.
  2. Infuse Saffron:

    • While the milk is simmering, add in the saffron strands, letting them infuse their lovely color and aroma into the milk.
  3. Sweeten with Sugar:

    • Stir in the sugar, ensuring it dissolves completely into the milk mixture.
    • Let it continue to simmer for another 10 minutes, allowing the flavors to meld beautifully.
  4. Add Aromatic Cardamom:

    • Crush the green cardamom pods lightly to release their fragrant seeds.
    • Add these aromatic seeds into the milk mixture, giving it a delightful warmth.
  5. Introduce Nutty Pistachios:

    • Coarsely chop the pistachios and add them to the milk, creating a wonderful contrast of textures.
  6. Mould the Kulfi:

    • Take your kulfi moulds and evenly distribute the flavored milk mixture among them.
    • Leave a little space at the top to accommodate expansion as the kulfi freezes.
  7. Freeze Until Set:

    • Carefully place the kulfi moulds in the freezer and allow them to set completely, ideally overnight for the best texture.
  8. Prepare the Falooda:

    • In a separate saucepan, combine the cornflour and arrowroot with a bit of water to form a smooth paste.
  9. Cook the Mixture:

    • Over low heat, cook the cornflour mixture, stirring constantly until it turns transparent and thickens.
    • If needed, add a bit more water to achieve the desired consistency.
  10. Create Falooda Strands:

    • Using a fine metal colander or a falooda press, push the thickened mixture through into a bowl of chilled water.
    • This creates those delicate and delightful falooda strands that will adorn your kulfi.
  11. Chill Until Serving:

    • Refrigerate the prepared falooda until you are ready to serve the dessert, letting it chill and set nicely.
  12. Serve in Style:

    • To serve, carefully unmould the set kulfi onto serving plates or bowls.
    • Garnish generously with the chilled falooda strands, adding a touch of elegance to your dessert.
