Ingredients

  • 3/4 cup milk
  • 1/2 cup butter
  • 3 cups unbleached flour
  • 2 tablespoons white sugar
  • 1 teaspoon instant yeast

  • 1 cup water

Instructions

  1. In a small saucepan, heat the milk until simmering, then remove it from the heat.
  2. Mix in the butter until melted, then allow the mixture to cool until lukewarm.
  3. In a large bowl, combine the flour, sugar, yeast, and salt.
  4. Stir the lukewarm milk mixture into the flour until a soft dough forms.

  6. Lightly oil a large bowl, place the dough in it, and turn to coat it with oil.
  7. Cover the bowl with a damp cloth and let the dough rise in a warm place until doubled in volume, about 1 hour.
  8. Deflate the risen dough and turn it out onto a lightly floured surface.
  9. Knead in the sultanas and shape the dough into a large round loaf.
  10. Place the loaf on a lightly greased baking sheet, cover it with a damp cloth, and let it rise again until doubled in volume, approximately 60 minutes.
  11. Preheat the oven to 375 degrees F (190 degrees C).
  12. In a small bowl, beat together the egg yolk and water.
  13. Brush the risen loaf with the egg yolk mixture, then bake it until the loaf is golden and the bottom sounds hollow when tapped, about 40 minutes.
  14. Transfer the baked bannock to a wire rack to cool before serving.
