Princess Diana’s Birthday Cake Recipe

Ingredients:

  • 6 eggs
  • 1 1/2 cups granulated sugar, divided
  • 1/3 cup water
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 3 cups heavy cream
  • 1 teaspoon vanilla extract (for the cream)
  • 1 tablespoon granulated sugar (for the cream)
  • 1 1/2 cups strawberries, sliced

Instructions:

  1. Preheat Oven and Prepare Pans:

    • Preheat your oven to 350°F (175°C).
    • Grease the bottoms and sides of two 8- or 9-inch round cake pans.
    • Line the bottoms with parchment or waxed paper, and grease the paper.
    • Add a tablespoon of granulated sugar to each pan, then tilt and shake to coat the bottoms and sides evenly. Shake out any excess sugar.
  2. Prepare Cake Batter:

    • In a large bowl, using an electric mixer on high speed, beat the eggs until pale, about 1 minute.
    • Gradually add 1 1/2 cups of sugar, beating for about 2 minutes or until the mixture is thick, tripled in volume, and forms a slowly dissolving ribbon when the beaters are lifted.
    • Quickly stir in the water and vanilla extract.
    • Gently fold in the flour and baking powder mixture until completely blended.
    • Pour the batter into the prepared cake pans.
  3. Bake the Cake:

    • Bake in the preheated oven for 30 to 35 minutes, or until the tops are lightly browned and a toothpick inserted near the center comes out clean.
    • Cool the cakes in the pans on a wire rack for 10 minutes.
    • Run a thin-bladed knife between the sides of the pans and the cakes to loosen them.
    • Invert the pans onto the wire rack, peel off the parchment or waxed paper, and allow the cakes to cool completely.
  4. Prepare the Filling:

    • In a large bowl, beat the heavy cream and vanilla extract until soft peaks form when the beaters are lifted.
    • Gradually beat in the tablespoon of granulated sugar until the cream reaches a spreading consistency.
  5. Assemble the Cake:

    • Using a long serrated knife, carefully slice each cake layer horizontally into two equal layers.
    • Place one layer on a serving plate and spread with 1 cup of the whipped cream.
    • Top with one-third of the sliced strawberries.
    • Repeat with two more layers of cake, whipped cream, and strawberries.
    • Place the final cake layer on top and spread the remaining whipped cream over the sides and top of the cake.
    • Garnish with the reserved strawberries.
  6. Chill and Serve:

    • Refrigerate the cake until you are ready to serve it.
    • The completed cake can be refrigerated for up to 4 hours before serving.
