Princess Diana’s Birthday Cake Recipe
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Total Time: 50 minutes
Servings: 12
Ingredients:
- 6 eggs
- 1 1/2 cups granulated sugar, divided
- 1/3 cup water
- 1 teaspoon vanilla extract
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 3 cups heavy cream
- 1 teaspoon vanilla extract (for the cream)
- 1 tablespoon granulated sugar (for the cream)
- 1 1/2 cups strawberries, sliced
Instructions:
-
Preheat Oven and Prepare Pans:
- Preheat your oven to 350°F (175°C).
- Grease the bottoms and sides of two 8- or 9-inch round cake pans.
- Line the bottoms with parchment or waxed paper, and grease the paper.
- Add a tablespoon of granulated sugar to each pan, then tilt and shake to coat the bottoms and sides evenly. Shake out any excess sugar.
-
Prepare Cake Batter:
- In a large bowl, using an electric mixer on high speed, beat the eggs until pale, about 1 minute.
- Gradually add 1 1/2 cups of sugar, beating for about 2 minutes or until the mixture is thick, tripled in volume, and forms a slowly dissolving ribbon when the beaters are lifted.
- Quickly stir in the water and vanilla extract.
- Gently fold in the flour and baking powder mixture until completely blended.
- Pour the batter into the prepared cake pans.
-
Bake the Cake:
- Bake in the preheated oven for 30 to 35 minutes, or until the tops are lightly browned and a toothpick inserted near the center comes out clean.
- Cool the cakes in the pans on a wire rack for 10 minutes.
- Run a thin-bladed knife between the sides of the pans and the cakes to loosen them.
- Invert the pans onto the wire rack, peel off the parchment or waxed paper, and allow the cakes to cool completely.
-
Prepare the Filling:
- In a large bowl, beat the heavy cream and vanilla extract until soft peaks form when the beaters are lifted.
- Gradually beat in the tablespoon of granulated sugar until the cream reaches a spreading consistency.
-
Assemble the Cake:
- Using a long serrated knife, carefully slice each cake layer horizontally into two equal layers.
- Place one layer on a serving plate and spread with 1 cup of the whipped cream.
- Top with one-third of the sliced strawberries.
- Repeat with two more layers of cake, whipped cream, and strawberries.
- Place the final cake layer on top and spread the remaining whipped cream over the sides and top of the cake.
- Garnish with the reserved strawberries.
-
Chill and Serve:
- Refrigerate the cake until you are ready to serve it.
- The completed cake can be refrigerated for up to 4 hours before serving.
