Description: First made this when I came to NZ, thought the sound of a ‘bread and butter’ pudding was ridiculous, silly girl!!!

Ingredients:

  • 1/2 cup sultanas
  • 1/2 cup currants
  • 1/3 cup rum
  • 8 slices unsalted butter
  • 14 large eggs
  • 5 tablespoons sugar
  • 1/4 cup milk
  • 3 1/2 teaspoons vanilla
  • 1 loaf of bread

Instructions:

  1. Soak Sultanas and Currants:

    • Combine sultanas and currants in a bowl.
    • Pour rum over the dried fruits.
    • Let them soak for 1 hour to absorb the flavors.
  2. Preheat Oven:

    • Preheat your oven to 180ยฐC (350ยฐF).
  3. Prepare Water Bath:

    • Fill a roasting pan with hot water, enough to come halfway up the side of your 1-quart baking dish.
  4. Prepare Baking Dish:

    • Butter the baking dish generously to prevent sticking.
  5. Prepare Bread:

    • Butter each slice of bread.
    • Cut the buttered bread into triangles.
  6. Layer Bread and Fruits:

    • Arrange the buttered bread triangles and soaked fruits alternately in the prepared baking dish until all are used.
  7. Prepare Custard Mixture:

    • In a separate bowl, whisk together eggs and sugar until the mixture becomes pale in color.
  8. Heat Milk:

    • Heat the milk until it reaches the boiling point.
  9. Combine Ingredients:

    • Gradually whisk the hot milk into the egg and sugar mixture.
    • Add any remaining rum from the soaked fruits and vanilla. Mix well.
  10. Pour Custard Over Bread:

    • Pour the custard mixture over the arranged bread and fruits.
    • Allow it to stand for 10 minutes to allow the bread to soak up the custard.
  11. Bake:

    • Place the baking dish in the roasting pan in the preheated oven.
    • Bake for 40-45 minutes or until the custard is just set.
    • If the top browns too quickly, cover it with aluminum foil to prevent burning.
  12. Serve:

    • Once baked, remove from the oven.
    • Serve warm with a scoop of ice cream or a dollop of cream.
