Bread & Butter Pudding Recipe ๐๐ฅ๐
Description: First made this when I came to NZ, thought the sound of a ‘bread and butter’ pudding was ridiculous, silly girl!!!

Ingredients:
- 1/2 cup sultanas
- 1/2 cup currants
- 1/3 cup rum
- 8 slices unsalted butter
- 14 large eggs
- 5 tablespoons sugar
- 1/4 cup milk
- 3 1/2 teaspoons vanilla
- 1 loaf of bread
Instructions:

Soak Sultanas and Currants:
- Combine sultanas and currants in a bowl.
- Pour rum over the dried fruits.
- Let them soak for 1 hour to absorb the flavors.

Preheat Oven:
- Preheat your oven to 180ยฐC (350ยฐF).

Prepare Water Bath:
- Fill a roasting pan with hot water, enough to come halfway up the side of your 1-quart baking dish.

Prepare Baking Dish:
- Butter the baking dish generously to prevent sticking.

Prepare Bread:
- Butter each slice of bread.
- Cut the buttered bread into triangles.

Layer Bread and Fruits:
- Arrange the buttered bread triangles and soaked fruits alternately in the prepared baking dish until all are used.

Prepare Custard Mixture:
- In a separate bowl, whisk together eggs and sugar until the mixture becomes pale in color.

Heat Milk:
- Heat the milk until it reaches the boiling point.

Combine Ingredients:
- Gradually whisk the hot milk into the egg and sugar mixture.
- Add any remaining rum from the soaked fruits and vanilla. Mix well.

Pour Custard Over Bread:
- Pour the custard mixture over the arranged bread and fruits.
- Allow it to stand for 10 minutes to allow the bread to soak up the custard.

Bake:
- Place the baking dish in the roasting pan in the preheated oven.
- Bake for 40-45 minutes or until the custard is just set.
- If the top browns too quickly, cover it with aluminum foil to prevent burning.
