Instructions:

  1. In a medium size saucepan, add 1 cup of water and cranberries. Cook until tender; then mash and set aside.

  2. In a large cooking pot, add 12 cups of water, apricots, prunes, raisins, apples, pears, peaches, and dates. Bring to a boil, then reduce heat to simmer. Cover and cook for 1 hour or until all fruit is soft. Stir occasionally to ensure even cooking.

  3. Add sugar and mashed cranberries to the pot. Cook for an additional 5 minutes to blend flavors.

  4. Remove 1 cup of liquid from the cooked fruit and stir in all-purpose and whole wheat flour to form a smooth, thin paste.

  5. Add the flour paste to the cooking pot and stir until well blended.

  6. Reduce heat to low and continue cooking for another 10 minutes, stirring frequently to prevent the fruit from settling to the bottom of the pot.

  7. Remove from heat and let cool before serving.

  8. Serve the fruit pudding as is, or if desired, accompany with ice cream or whipping cream for an extra indulgence.
