Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 cup vegetable broth
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 can (15 ounces) great northern beans, drained and rinsed
  • 1 1/2 tablespoons fresh rosemary, chopped
  • 1/2 tablespoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, roasted and sliced
  • 1 yellow bell pepper, roasted and sliced

Instructions:

  1. In a large saucepan, heat olive oil over medium heat.
  2. Add diced onion and minced garlic to the saucepan and cook until tender, stirring occasionally, for about 5 minutes.
  3. Pour in vegetable broth and bring the mixture to a boil over high heat.
  4. Stir in the cannellini beans, great northern beans, fresh rosemary, dried rosemary, and black pepper.
  5. Reduce the heat to medium-low and let the stew simmer, uncovered, for 10 minutes, stirring occasionally to prevent sticking.
  6. Finally, stir in the roasted red and yellow peppers and continue to cook for an additional 3 minutes to allow the flavors to meld together.
