Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 cup vegetable broth
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 1 can (15 ounces) great northern beans, drained and rinsed
- 1 1/2 tablespoons fresh rosemary, chopped
- 1/2 tablespoon dried rosemary
- 1/4 teaspoon black pepper
- 1 red bell pepper, roasted and sliced
- 1 yellow bell pepper, roasted and sliced
Instructions:
- In a large saucepan, heat olive oil over medium heat.
- Add diced onion and minced garlic to the saucepan and cook until tender, stirring occasionally, for about 5 minutes.
