Instructions:

  1. Preheat oven to 150Β°C.
  2. Prepare Baking Dish: Place celery, onion, lemon (cut into halves), and garlic bulb in a baking dish, ensuring the flat side is down where appropriate.
  3. Prepare Chicken: Cut chicken thighs in half or thirds depending on size, then place them on top of the celery and other ingredients in the baking dish.
  4. Season: Drizzle the chicken with extra virgin olive oil, then pour red wine and water over it.
  5. Add Flavors: Sprinkle chopped oregano over the chicken, and season generously with cracked pepper and salt.
  6. Cover and Bake: Cover the baking dish with foil, ensuring it’s sealed well, and bake in the preheated oven for 1 hour.
  7. Add Olives and Lemon Juice: After 1 hour, add green olives to the dish and squeeze the lemon juice into the baking juices.
  8. Increase Temperature: Remove the foil halfway through the cooking time and increase the oven temperature to 250Β°C.
  9. Continue Cooking: Turn the chicken pieces and cook for a further hour until the chicken is done and the onions are soft and slightly golden.
  10. Prepare Croutons: While the chicken is cooking, toast slices of bread until golden. Squeeze roasted garlic out of the paper and spread one clove on each crouton.
  11. Serve: Once the chicken is done, mash up the remaining garlic cloves in the pan juices. Serve the chicken, onions, and olives with some of the pan juices poured over the top. Accompany with the garlic-infused croutons and freshly ground pepper.
