Instructions:

Prep the Ingredients: 
 Begin by washing and peeling the tomatoes using a serrated vegetable peeler for ease. Afterward, peel the onions and slice them into rings, about ½ cm thick. Similarly, peel the potatoes and cut them into ½ cm thick slices. Place the sliced potatoes in a colander and allow them to drain.

Prepare the Bread: 
 In a bowl, crumble the stale bread into small pieces (or use a food processor to break it down into fine crumbs).

Prepare the Baking Dish: 
 For this dish, use a ceramic oval baking dish, approximately 21 cm by 30 cm with a 7 cm high rim. It’s important not to use an aluminum baking dish, as the vegetables may stick to the bottom. Repeat the process by adding more onion, tomato, and bread until the dish is fully layered.

 Finish with a final layer of potatoes on top. Season with salt, pepper, and another sprinkling of crumbled bread. Add grated Pecorino Romano cheese, sprinkle with oregano, and drizzle with more olive oil.
