Instructions:

  1. Prepare the Bread Shell: Start by cutting the rustic bread. Using a serrated knife, make a horizontal incision across the top third of the bread, separating it into two parts: one-third will serve as the lid, and the remaining two-thirds will be the container.

  2. Remove the Bread Interior: With a small knife, carefully cut along the crust of the bread to separate the soft inner bread from the outer shell. Gently pull out the bread’s crumb with your hands, being cautious not to tear the crust.

  3. Toast the Bread: Place the bread shell, lid, and the cubed interior on a baking tray lined with parchment paper. Drizzle with a bit of olive oil.

  4. Grill: Put the tray in a preheated oven at 240°C (475°F) with the grill function on. Toast for about 4 minutes, then flip the bread and toast for another 4 minutes. After 8 minutes, the bread should be perfectly crispy and golden. Let it cool completely.

  5. Prepare the Salad: While the bread is cooling, focus on preparing the salad. Cut the mozzarella into cubes, slice the spring onions into rounds, and halve the Sardinian tomatoes.

  6. Assemble the Salad: In a large bowl, add half of the toasted bread cubes (the remaining ones can be saved for soups or turned into breadcrumbs). Add the sliced onions, pitted taggiasca olives, diced tomatoes, mozzarella cubes, and torn basil leaves.
