Ingredients:

Quantity Ingredient
1 1/2 dried navy beans
water
2 butter
1 olive oil
1 celery stalk, chopped
1/2 carrot, chopped
6 green beans, trimmed
1 bunch green onions, chopped
2 garlic cloves, minced
1 tablespoon fresh basil, chopped
1/4 teaspoon salt
3 1/2 cups canned vegetable broth
2 tablespoons parsley, chopped
1/4 cup grated Parmesan cheese

Instructions:

  1. Combine dried navy beans with enough water to cover by 2 inches in a large saucepan and let them stand overnight.

  2. Drain and rinse the soaked beans.

  3. In a saucepan, bring the soaked beans and 5 cups of water to a boil.

  4. Reduce the heat and simmer for about 1 hour or until the beans are just tender.

  5. Drain the beans and set them aside.

  6. In another large saucepan, melt the butter over medium heat.

  7. Add the chopped celery, chopped carrot, chopped green onion, minced garlic, chopped basil, salt, and pepper.

  8. Cook the vegetables for about 5 minutes until they begin to soften.

  9. Cover the saucepan, reduce the heat to low, and cook for an additional 10-15 minutes until the vegetables are tender.

  10. Add the cooked beans and vegetable broth to the saucepan with the cooked vegetables.

  11. Bring the mixture to a boil, then reduce the heat to medium-low.

  12. Cover and simmer for 30 minutes, allowing the flavors to meld together.

  13. Serve the soup hot, garnished with chopped parsley and grated Parmesan cheese on each serving, just before bringing it to the table. Enjoy your hearty and flavorful Tuscany Bean Soup!
