Instructions

Step 1: Prepare the Dough
Begin by cutting the cold butter into small cubes. Place it in the bowl of a stand mixer equipped with the paddle attachment. Add the brown sugar and mix the ingredients together until you achieve a smooth, creamy consistency. This will create the base of your dough.

Step 2: Add the Wet Ingredients
Once the butter and sugar are well combined, add the eggs and ground cinnamon to the mixture. Continue to mix until the eggs are fully absorbed into the dough, creating a smooth and uniform texture.

Step 3: Combine the Flours
Add the whole wheat flour and all-purpose flour to the mixture, along with a pinch of salt. Mix on low speed until the dough begins to come together. At this stage, you may want to switch to mixing by hand to ensure the flour is evenly distributed. The dough should be soft and slightly sticky but should hold together when pressed.

Step 4: Chill the Dough
Once the dough is ready, transfer it to a clean surface. Gather the dough into a ball and wrap it tightly in plastic wrap. Let it chill in the refrigerator for at least 30 minutes. This resting time will help firm up the dough and make it easier to roll out.

Step 5: Roll Out the Dough
After the dough has chilled, divide it into two equal portions. Roll out the first portion on a lightly floured surface, forming a disk about ½ cm thick. Transfer the rolled dough into a 30 cm tart pan (no need to grease the pan). Gently press the dough into the edges of the pan to fit, ensuring it adheres well to the sides. If any dough overhangs the edge, use a rolling pin to trim the excess.

Step 6: Add the Peach Jam
Once the base is ready, spoon the peach jam into the center of the tart shell. Use the back of a spoon to spread it evenly, covering the entire surface of the dough. This will be the sweet, fruity filling that contrasts beautifully with the crunchy, cinnamon-scented crust.

Step 7: Prepare the Top Crust
Roll out the second portion of dough in the same manner, creating another disk about ½ cm thick. To make it easier to handle, roll the dough onto a piece of parchment paper. Then, carefully lift the paper and invert the dough over the peach jam-filled tart. Press the edges to seal, trimming any excess dough with a knife.

Step 8: Final Touches
Sprinkle the top of the tart with a little brown sugar for added sweetness and a lovely golden finish.

Step 9: Bake the Tart
Place the tart in a preheated static oven at 180°C (350°F) on the middle rack. Bake for about 40 minutes or until the crust is golden brown and crispy. The jam will bubble slightly, indicating the tart is perfectly baked.

Step 10: Cool and Serve
Once the tart is baked to a beautiful golden color, remove it from the oven and let it cool for a few minutes before serving. Slice it into 10 generous portions and enjoy a warm, sweet, and slightly spiced treat. This whole wheat tart is perfect when paired with a cup of tea or as a delightful finish to any meal.

This whole wheat tart recipe offers a balance of rich flavor, texture, and nutrition, making it a delightful addition to your dessert repertoire. With its simple ingredients and straightforward preparation steps, it’s sure to be a crowd-pleaser, whether served at a family gathering or enjoyed as an everyday treat. The combination of whole wheat flour and brown sugar brings a warm, wholesome essence, while the peach jam filling adds a burst of natural sweetness.
