Whole Wheat Pine Nut Rolls

Ingredients:

Whole wheat flour 300g
All-purpose flour 100g
Dry yeast 7g
Water (lukewarm) 250g
Extra virgin olive oil 1 tbsp
Sugar 10g
Fine salt 7g
Pine nuts 50g

Instructions:

  1. Activate the Yeast:
    In a small bowl, combine the dry yeast with the lukewarm water. Stir with a teaspoon to dissolve the yeast and sugar. Let it rest for about 5 minutes, allowing the yeast to activate and bubble up.

  2. Mix the Flours:
    In a large mixing bowl, combine the whole wheat flour and all-purpose flour. Use a spoon to gently stir and mix the two flours together until evenly distributed.

  3. Add the Wet Ingredients:
    Make a well in the center of the flour mixture, then pour in the yeast-water mixture, olive oil, and a pinch of fine salt. Begin mixing the ingredients with your hands or a spoon to form a rough dough.

  4. Knead the Dough:
    Transfer the dough onto a clean, lightly floured surface. Knead the dough for about 10 minutes, until it becomes smooth, elastic, and homogenous. If the dough feels too sticky, sprinkle a small amount of flour as needed.

  5. First Rise:
    Place the dough ball in a lightly oiled bowl, then cover it with a damp cloth or plastic wrap. Let it rise in a warm place for about 1 hour, or until it has doubled in size.

  6. Shape the Rolls:
    Once the dough has risen, punch it down gently to release the air. Divide the dough into 8 equal portions (about 50g each). Take each portion and work it with your hands to form an elongated shape, like a small baguette. Gently press the dough with your fingers to flatten it slightly, then roll it up into a spiral shape, resembling a snail or a coil.

  7. Arrange the Rolls:
    Place each formed roll on a baking sheet lined with parchment paper, leaving enough space between them for expansion. Cover the rolls with a clean cloth and let them rest for another 30 minutes to rise.

  8. Preheat the Oven:
    Preheat your oven to 180°C (350°F) during the last 15 minutes of the rising time.

  9. Bake:
    Once the rolls have risen, uncover them and sprinkle the pine nuts over the top. Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown on top and sound hollow when tapped on the bottom.

  10. Cool and Serve:
    Remove the rolls from the oven and let them cool slightly on a wire rack. Serve them warm or at room temperature.
