Ingredients:

  • 3 russet potatoes
  • 1 rutabaga
  • 1 onion
  • 1/2 cup butter
  • 2 tablespoons margarine
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • Pinch of cayenne pepper (optional)
  • 1 cup grated parmesan cheese

Instructions:

  1. Peel potatoes and rutabaga and cut into 1/2″ cubes.

  2. Place in a saucepan, cover with cold water, lightly salt, and boil until tender, about 15 minutes. Be careful not to overcook. Drain, reserving the cooking water for soup base.

  3. Preheat oven to 425°F (about 220°C).

  4. In a small saucepan, melt margarine. Whisk in flour and cook over medium-high heat for 30 seconds.

  5. While whisking constantly, add chicken broth and milk. Continue whisking until sauce comes to a boil. Boil gently for 2 minutes. Remove from heat and stir in salt and pepper.

  6. Slice the onion into wide rings, separate the rings, and add to the potato/rutabaga mixture. Toss well.

  7. Place the mixture in a casserole dish sprayed with non-stick cooking spray.

  8. Sprinkle with cayenne pepper if desired.

  9. Pour the sauce over all, ensuring even coverage.

  10. Sprinkle evenly with parmesan cheese.

  11. Bake for 15 minutes, or until the top begins to brown and the sauce is bubbly.

  12. Serve hot, and enjoy this delightful twist on classic potatoes!

Notes:

  • This recipe was tested at high altitude; adjustments to liquids and cooking times may be necessary depending on your location.
  • The reserved cooking water from boiling the potatoes and rutabaga can be frozen and used as a nutritious soup base in future recipes.
