Saffron Crackers with Crescenza

Whole Milk 250ml
Butter 25g
Saffron Powder 25g
Fresh Yeast 8g
Fine Salt 10g
Crescenza Cheese 200g

Instructions:

To prepare these delicious saffron crackers, start by placing half a glass of milk from the total amount into a small bowl. Add the saffron powder to the milk and stir until the saffron is fully dissolved.

Next, pour the remaining milk into another glass, crumble the fresh yeast into it, and stir until the yeast is completely dissolved.

Now, in a large mixing bowl, sift the flour and create a well in the center. Pour in the yeast and milk mixture along with the saffron-infused milk, and add the salt. Mix everything together, incorporating the ingredients into a dough.

Transfer the dough onto a flat work surface and knead it by hand until smooth. Wrap the dough in plastic wrap and allow it to rise at room temperature for about 30 minutes.

Once the dough has rested, roll it out with a rolling pin to a thickness of about 1 mm. Transfer the dough onto a baking tray lined with parchment paper, then use a pastry cutter or pizza wheel to cut it into square crackers.

Cover the baking tray with plastic wrap and let the crackers rest for an additional 30 minutes.

Preheat your oven to 160°C (320°F) on the fan setting. Bake the crackers on the middle rack for about 15 minutes or until they turn golden and crispy. Once done, remove from the oven and let them cool completely.

After cooling, spread a generous amount of creamy Crescenza cheese on top of each cracker and serve. Enjoy these savory saffron crackers as a perfect appetizer for any occasion!
