Foxtail Millet Kheer Recipe (Millet Pudding with Saffron & Nuts)

Description:
This Foxtail Millet Kheer, also known as Millet Pudding with Saffron & Nuts, offers a delectable twist on the classic rice-based kheer. Foxtail millet, locally known as thenai in Tamil Nadu, is a highly nutritious grain, rich in dietary fiber, minerals, and antioxidants, and it comes with a low cholesterol profile. This versatile millet, the second most commonly grown species of millet, can be used in a variety of dishes, from soups to salads and desserts. When included in your diet, foxtail millet enhances both taste and health benefits. This easy-to-make kheer highlights foxtail millet as the main ingredient, giving you a nourishing and indulgent dessert. Serve it alongside meals like Steamed Rice, Tamil Nadu Style Pala Kottai Sambar, or after a flavorful Kongunadu Special Pattani Biryani for an unforgettable culinary experience.

Ingredients:

Ingredient Quantity
Milk 1 liter
Foxtail Millet 50 grams
Saffron Strands 5 strands
Fresh Coconut (grated) 2 tablespoons
Sugar 1/4 cup
Dry Fruits (Almonds, Pistachios) 1/4 cup

Preparation Time: 15 minutes
Cooking Time: 60 minutes
Total Time: 75 minutes

Instructions:

  1. Heat the Milk:
Begin by pouring 1 liter of milk into a heavy-bottomed pan. Set it over medium heat. While the milk is heating, wash the foxtail millet thoroughly and drain the excess water.

  2. Cook the Foxtail Millet:
Once the milk comes to a boil, add the washed foxtail millet and saffron strands to the pan. Allow the mixture to come to a quick boil, and then reduce the heat to low. Let it simmer, stirring occasionally, until the foxtail millet is fully cooked. This will take approximately 10 to 15 minutes, so check by tasting the millet to ensure it has softened to your preference.

  3. Add Coconut and Sugar:
Once the millet is tender, add 2 tablespoons of freshly grated coconut and 1/4 cup of sugar to the pan. Continue to simmer the kheer for another 10 minutes, stirring occasionally to prevent the milk from settling at the bottom and burning. Taste the sweetness at this point and adjust the sugar if needed.

  4. Final Touches:
Once the kheer has thickened slightly and all the flavors have melded together, turn off the heat. The millet pudding is now ready to be served.

  5. Garnish and Serve:
Garnish your Foxtail Millet Kheer with slivered almonds and pistachios for an added crunch and richness. You can serve it warm or chill it in the refrigerator for a refreshing dessert option.

Serving Suggestions:
This Foxtail Millet Kheer makes a perfect dessert to be enjoyed alongside a hearty meal of Steamed Rice, the comforting Tamil Nadu Style Pala Kottai Sambar, or a fragrant plate of Kongunadu Special Pattani Biryani. Whether served warm or chilled, this sweet treat will add a special touch to your meal and satisfy your sweet cravings.

Enjoy the goodness of foxtail millet in every spoonful of this delightful pudding, which combines the earthy flavor of millet, the aromatic saffron, and the richness of nuts.
