Orzo with Tuna and Saffron
Category: Pasta Dishes
Serves: 4

Ingredients

Ingredient Quantity
Canned Tuna in Olive Oil 100g
Pearl Barley (Orzo) 200g
Saffron Threads 3g
Asparagus 250g
Extra Virgin Olive Oil to taste
Fine Salt to taste
Feta Cheese 50g

Instructions

  1. Prepare the Orzo: Begin by cooking the orzo in a large pot of boiling water. To infuse extra flavor, add the saffron threads to the water as it heats up. This will allow the saffron to release its beautiful color and distinctive aroma into the pasta. Cook the orzo according to the package instructions, usually about 10-12 minutes, until it’s tender but still firm to the bite.

  2. Prepare the Asparagus: While the orzo is cooking, take your asparagus and trim off the tough ends. Peel the outer skin of the stalks to remove any fibrous texture, then slice them into bite-sized pieces. Slice the tips lengthwise for a more elegant presentation. Heat a drizzle of olive oil in a frying pan or skillet over medium heat. Add the asparagus to the pan, sprinkle with a pinch of fine salt, and sauté for a few minutes until they are tender and lightly golden, about 4-5 minutes.

  3. Combine Tuna and Feta: Once the orzo is cooked, drain it thoroughly, reserving a small amount of the cooking water. In a large bowl, combine the orzo, the drained tuna, and the sautéed asparagus. Gently break apart the tuna with a fork, allowing it to mix seamlessly with the orzo. Crumble the feta cheese on top of the mixture, giving everything a good stir to combine the flavors. If the mixture feels dry, add a splash of the reserved pasta water to bring everything together.

  4. Finishing Touches: Drizzle a little extra virgin olive oil over the dish for added richness and taste. Give the dish one final stir, ensuring that the saffron, tuna, and feta are evenly distributed throughout. Taste and adjust the seasoning with salt if needed.

  5. Serve: This dish can be served warm or at room temperature, making it perfect for any occasion. The vibrant yellow of the saffron, the freshness of the asparagus, and the richness of the tuna and feta create a beautiful, flavorful combination.
