Instructions

  1. Prepare the Pineapple:
    Start by grating the pineapple. In a medium-sized pan, heat the grated pineapple with a little water and cook on medium heat. Let it simmer until the water evaporates and the pineapple softens.

  2. Sweeten and Infuse:
    Once the pineapple is cooked, add 1 cup of sugar and a few saffron strands. Continue cooking the mixture until all the water evaporates and the sugar has melted into the pineapple.

  3. Fry the Nuts and Raisins:
    In a separate pan, heat 2 tablespoons of ghee on low heat. Add the cardamom powder and mix for a second to release its aroma. Immediately add the sliced almonds and sultana raisins, cooking them gently until they turn lightly golden. Once done, remove them from heat.

  4. Combine the Ingredients:
    Add the fried nuts and raisins to the cooked pineapple and sugar mixture, stirring gently to incorporate them. Now, add 1/2 cup of fresh cream and 1/2 cup of grated khoya (mawa) to the pan. Cook for an additional 5 minutes, stirring continuously, until the cream and khoya are fully integrated into the mixture.

  5. Add the Cake:
