Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 10-cup baking dish with some of the butter, ensuring even coverage.

  2. Layer half of the potato slices in overlapping rows at the bottom of the prepared baking dish.

  3. Dot the potatoes with a little butter and sprinkle with a pinch of fresh sage, dried sage, dried tarragon, and salt to taste.

  4. Layer half of the sliced green peppers, half of the sliced onion, half of the long grain rice, and half of the sliced zucchini over the potatoes.

  5. Dot the layer with butter again, then sprinkle with fresh sage, dried sage, dried tarragon, and salt to taste. Repeat the layering process.

  6. Arrange the tomato slices evenly over the top layer of the casserole.

  7. Cover the baking dish with foil and place it in the preheated oven. Bake for 1½ to 1¾ hours, or until the potatoes are tender and the flavors have melded beautifully.

  8. Remove the foil from the baking dish, and sprinkle the shredded Swiss cheese over the top of the casserole.

  9. Cover the dish again and return it to the oven. Bake for an additional 10 minutes, or until the cheese is gloriously melted and bubbly.

  10. Allow the casserole to rest, covered, for about 10 minutes before serving, allowing the flavors to settle and meld further.

  11. Garnish with fresh sage sprigs, if desired, for a delightful finishing touch.
