Instructions:
1. Preparing the Marinade for the Salmon:
To begin making the piadina rolls with salmon, avocado, and yogurt cream, first, prepare the marinade for the salmon. Squeeze the juice of the lemons to obtain about 50g of juice. Depending on the size of the lemons, you may need 1 or 2 lemons. In a small bowl, combine 50g of olive oil, leaving aside the remaining 10g for later. Add a pinch of fine salt and black pepper. Now, add the freshly squeezed lemon juice to the mixture and whisk together with a fork. Set the marinade aside.
2. Marinating the Salmon:
Next, it’s time to handle the salmon fillet. Since the salmon will not be cooked, but rather marinated, if you’re using Norwegian salmon, thereโs no need to treat the fish beforehand. However, if you’re using any other type, ensure the salmon has been previously frozen (a process called “blast freezing”) before purchasing. Use a pair of tweezers to remove any remaining bones from the fillet. Arrange the slices of salmon in a baking dish, pour the marinade over the fish, and cover with plastic wrap. Allow the salmon to marinate in the fridge for about 1 hour.
3. Preparing the Avocado:
While the salmon marinates, prepare the other ingredients for the filling. Take the avocado, cut it in half, and remove the pit. Gently peel the skin off each half and slice the avocado into thin pieces. Set the slices aside.
4. Making the Yogurt Cream:
For the yogurt cream, place the Greek yogurt into a bowl. Grate the zest of a lime directly into the yogurt. Season with salt and pepper to taste, then add the remaining 10g of olive oil. Mix gently with a spoon until all ingredients are well combined. The yogurt cream is now ready.
5. Preparing the Tomatoes:
Rinse the San Marzano tomatoes, trim off the stems, and slice them into thin rounds. Set the tomato slices aside.
6. Assembling the Piadina Rolls:
Now that all the ingredients are ready, it’s time to assemble the piadina rolls. Warm up the piadine (flatbreads) by either heating them in a dry pan for a few seconds on each side or using a grill. On a clean surface or cutting board, lay out each warmed piadina and start assembling. In the center of each piadina, layer the marinated salmon, avocado slices, tomato slices, and a generous spoonful of the yogurt cream.
7. Rolling the Piadina:
Once the ingredients are in place, carefully roll up each piadina tightly to form a wrap or roll. Repeat this process until all the ingredients are used up.
