Demi Baguette with Salmon

Instructions

To begin, prepare the salmon by marinating it quickly. Using a sharp, thin knife, remove the skin from the salmon and slice it into thin strips, then into smaller pieces, and finally into cubes. Proceed to finely chop it with a knife until it forms a fine, almost pureed texture. Transfer the salmon to a bowl, season with extra virgin olive oil, salt, black pepper, a few sprigs of fresh dill, grated lemon zest, and a few drops of Tabasco® sauce. Mix well and set it aside for a moment to allow the flavors to meld.

Next, halve the avocados and remove the pits. Using a spoon, gently scoop out the flesh from the skin, ensuring you don’t damage it. Slice the avocado into thin rounds and place them in a bowl. Drizzle lemon juice over them to prevent browning and toss lightly.

For the pomegranate, carefully cut it open and extract the juicy seeds, adding them to another bowl.

Now that all components are ready, take the baguettes and slice them in half lengthwise. Generously butter each half with salted butter and toast them in a non-stick skillet with the cut sides down. Toast until they’re golden brown and slightly crispy, then remove them from the pan.

Spread a layer of sour cream (crème fraîche) on the bottom of each baguette half, followed by the seasoned salmon mixture. Add the avocado slices, pomegranate seeds, and a few watercress sprouts on top for an added burst of freshness.

Finally, cut each baguette half into two, yielding 4 demi baguettes with salmon. Serve immediately and enjoy the delightful combination of creamy, savory, and tangy flavors in each bite.
