Salted Cod Terrine with Apple Sauce

Instructions

For the Cod Terrine:

  1. Prepare the Raisins: Begin by rinsing the raisins under running water, then place them in a small bowl with the white wine to rehydrate. Let them sit for about 15 minutes, then drain the raisins, keeping the wine aside for later use.

  2. Prepare the Cod: Next, take the salted cod and remove the skin using a sharp knife. Be sure to carefully remove any bones from the fish. Once the cod is cleaned, cut it into smaller pieces.

  3. Mix the Ingredients: In a large mixing bowl, combine the desalted cod, egg yolks, grated Parmigiano Reggiano, chopped fresh parsley, and pine nuts. Add the rehydrated raisins (without the wine) and stir well with a fork until all ingredients are fully incorporated into a smooth, cohesive mixture.

  4. Prepare the Baking Dish: Butter a 27×10 cm (10.5×4 inches) plumcake mold, about 7 cm (2.75 inches) high, ensuring the bottom and sides are well-coated. Sprinkle a thin layer of grated Parmigiano Reggiano on the bottom of the mold for extra flavor and a nice crust.

  5. Bake the Terrine: Transfer the cod mixture into the prepared mold, pressing it down gently to ensure the terrine is compact and even. Use a spatula to level the top. Place the mold in the oven and bake at 180°C (350°F) for 40-45 minutes, or until golden and firm.


For the Apple Sauce:

  1. Prepare the Apples: While the terrine bakes, peel and core the green apples. Cut them into chunks and set aside.

  2. Cook the Apples: In a non-stick saucepan, add the white wine that you set aside from soaking the raisins. Bring it to a gentle simmer over moderate heat, allowing the wine to reduce for a couple of minutes. Then add the apple chunks and sugar. Cook over low heat, stirring occasionally, until the apples soften and start to break down, about 15-20 minutes.

  3. Blend the Sauce: Once the apples are tender, add a small amount of fresh ginger to taste (optional but highly recommended for added depth of flavor). Continue cooking for a few minutes until the apples are completely soft.

  4. Puree the Sauce: Transfer the cooked apples to a high-sided container and blend them with an immersion blender until smooth. If the sauce is too thick, add a little water to achieve the desired consistency.


To Serve:

Once the cod terrine is baked and golden, allow it to cool slightly before slicing it into thick portions. Serve each slice of the terrine with a generous spoonful of the apple sauce on the side.
