Winter vegetables are a staple during the colder months, and Acorn Squash, also known as Green Pumpkin, is one of the most versatile options. This recipe combines the delicate flavor of acorn squash with the spicy and flavorful sambal paste, creating a delicious side dish that pairs well with many main courses.

Ingredients:

  • 1 medium-sized Acorn Squash
  • 3 teaspoons Sambal paste
  • 1 teaspoon Turmeric powder (Haldi)
  • 2-inch piece of Ginger
  • 3 cloves Garlic
  • 3 teaspoons Groundnut oil
  • Salt, to taste

Prep Time: 10 minutes

Cook Time: 30 minutes

Instructions:

  1. Start by washing the Acorn Squash and cutting it lengthwise into 1-2 inch thick slices. You can leave the skin on for texture.
  2. Coat the squash slices with turmeric powder and a pinch of salt. Set aside.
  3. In a skillet, heat the groundnut oil over medium heat. Add the squash slices to the skillet and allow them to cook for about 5 minutes, turning them to ensure they cook evenly on all sides.
  4. Meanwhile, grind the ginger and garlic into a fine paste using a mixer or food processor.
  5. Add the ginger-garlic paste to the cooking squash and stir well.
  6. Mix in the sambal paste and continue to stir-fry for a few minutes, ensuring the squash is well-coated with the spices.
  7. Add 2-3 tablespoons of water to the skillet and let the squash cook until it softens. If you prefer a drier texture, cook for a bit longer until the sauce thickens, giving it a pickle-like consistency.
  8. Serve your Acorn Squash Sambal as a delightful side dish to complement Thai Jasmine Sticky Rice or Vegetarian Thai Red Curry for a complete Pan-Asian meal.
