To begin making these delicious and fluffy Sarde Ricotta Buns, start by preparing the yeast mixture. Pour the lukewarm water into a large mixing bowl and dissolve the fresh brewer’s yeast into it, ensuring it is fully dissolved before moving to the next step.
Once the yeast has dissolved, gradually add the all-purpose flour and semolina flour to the water and yeast mixture. Stir the ingredients together until they form a rough dough. At this point, transfer the dough to a clean bowl, and cover it tightly with plastic wrap. Let the dough rest and rise in a warm area for about 1 to 1.5 hours, or until it has doubled in size.
Once the dough has risen, it’s time to shape the buns. Sprinkle a light layer of flour on your countertop or work surface. Gently take the dough and, using your hands, spread it out into a rectangle or oval shape. Be gentle to avoid deflating the dough too much. In the center of this dough, place small scoops of sheep ricotta. Carefully fold the edges of the dough over the ricotta and begin forming the dough into a round ball.
Now, divide this dough ball into four equal pieces using a dough scraper. Shape each piece into a smooth ball by gently rolling them between your palms. Place the formed buns onto a baking sheet lined with parchment paper.
Once all four buns are shaped and placed on the sheet, lightly dust the tops of each bun with a little more all-purpose flour. This will give them that rustic, flour-dusted finish when they bake.
