Cabbage Capsicum Sabzi (Satvik Style)

  • 3 cups cabbage, thinly sliced lengthwise
  • 1 tsp oil
  • 1 green capsicum (bell pepper), thinly sliced lengthwise
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 2 dried red chilies
  • Pinch of asafoetida
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/4 tsp red chili powder
  • Salt, to taste
  • 1 tsp lemon juice

Cook Time: 15 minutes

Instructions:

  1. Cook the Cabbage:
    Start by placing the cabbage in a pressure cooker with 2 tbsp of water. Cook for 1 whistle. Once the pressure is released, open the cooker and set the cabbage aside.

  2. Prepare the Tempering:
    Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, allowing them to crackle.

  3. Add Spices:
    Add a pinch of asafoetida, turmeric powder, and dried red chilies to the pan. Stir for about 10 seconds until fragrant.

  4. Cook the Capsicum:
    Add the sliced capsicum to the pan and cook until it softens.

  5. Combine the Vegetables:
    Add the cooked cabbage to the pan with the capsicum. Mix well.

  6. Spice it Up:
    Sprinkle coriander powder, red chili powder, and salt over the vegetables. Mix everything together.

  7. Simmer:
    Cover the pan and let it cook for an additional 2 minutes.

  8. Finish:
    Turn off the heat, drizzle lemon juice over the sabzi, and garnish with fresh coriander leaves.
