Instructions:

  1. Prepare the Broccoli Rabe:
    Begin by cleaning the broccoli rabe (friarielli). Set aside the smaller leaves and flower buds, while removing any large, yellowed leaves. From the stems, carefully pull off the healthy leaves by gripping the stem with one hand and gently pulling up the leaves with the other. Wash the rabe thoroughly under cold running water to ensure no dirt or grit remains.

  2. Cook the Broccoli Rabe:
    Heat some extra virgin olive oil in a large pan over medium heat. Add the garlic, gently crushed, and the fresh chili pepper, split in half. Sautรฉ until fragrant, then add the broccoli rabe to the pan. Cover the pan with a lid and cook the rabe, stirring occasionally, until it wilts and softens. Halfway through cooking, season with salt to taste. Once the rabe is tender and fully wilted, remove from the heat and set aside.

  3. Cook the Sausages:
    While the rabe is cooking, take the sausages and prick them a few times with a fork or knife to prevent them from bursting during cooking. In another pan, add a small amount of water and place the sausages in the pan. Cover and cook for about 10 minutes, allowing the sausages to steam and cook through. As the water evaporates, pour in the white wine and let it cook off, allowing the wine to reduce and infuse the sausages with flavor.

  4. Brown the Sausages:
    Once the wine has evaporated, continue to cook the sausages until they are golden brown on all sides. For extra flavor, you can add a little more olive oil. The sausages should now be nicely browned and crispy on the outside, and fully cooked through on the inside.

  5. Combine the Sausages and Broccoli Rabe:
    Transfer the browned sausages to the pan with the cooked broccoli rabe. Stir well to combine the flavors. Place the pan back on the heat for about 5 minutes, allowing the sausages to meld with the rabe and absorb the flavors.

  6. Serve:
    Once the sausages are well-infused with the broccoli rabeโ€™s flavors, remove from heat and serve immediately, hot and delicious. This dish pairs wonderfully with a slice of crusty bread or as a standalone meal.
