Category: Main Dishes

Servings: 4

Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Ingredients:

Ingredient Quantity
Piadine (Italian flatbreads) 4
Sausage (preferably Italian) 600g
White wine 85g
Fine salt To taste
Parmigiano Reggiano DOP (grated) 80g
Arugula (fresh) 60g
Yellow onions 1kg
Water 50g
Extra virgin olive oil To taste

Instructions:

Step 1: Braise the Onions

  1. Prepare the onions: Begin by peeling and halving the yellow onions. Slice them thinly to ensure even cooking.
  2. Caramelize the onions: In a large pan, heat a drizzle of extra virgin olive oil over high heat. Add the onions and cook them for a couple of minutes, stirring occasionally, until they begin to caramelize and soften.
  3. Add water: Once the onions have caramelized, pour in the water to deglaze the pan. This will create a flavorful base for the braised onions.
  4. Slow cook the onions: Reduce the heat to low, cover the pan, and let the onions cook for about 15 minutes. The onions should be soft but still have some texture. Adjust the seasoning with salt to taste.

Step 2: Prepare the Sausage

  1. Remove the casing: Slice the sausages lengthwise and remove the casing. This will make it easier to break up the sausage while cooking.
  2. Brown the sausage: In a separate pan (without adding any oil, as the sausage will release its fat), cook the sausage over medium-high heat. Once it starts to brown, deglaze with the white wine. Let the wine cook off until only a slight residue remains, and the sausage is fully cooked. Remove the pan from the heat.

Step 3: Combine the Ingredients

  1. Combine sausage and onions: Once the onions are ready, add them to the pan with the sausage. Mix well and allow the flavors to meld together for a minute or two. Turn off the heat and set the mixture aside.

Step 4: Assemble the Piadina

  1. Heat the Piadina: Take a piadina (flatbread) and heat it in a hot pan for about 2 minutes per side, flipping occasionally with your fingers to ensure even cooking.
  2. Assemble: Once the piadina is warm and slightly crispy, place it on a flat surface. On one half, sprinkle a layer of grated Parmigiano Reggiano, followed by a handful of fresh arugula.
  3. Add the filling: Spoon some of the sausage and braised onion mixture onto the piadina.
  4. Top it off: Add another layer of grated Parmigiano Reggiano on top and fold the piadina in half.
  5. Serve: Cut the piadina into two halves and serve immediately. If you have more piadine to prepare, keep the assembled piadina warm in the oven while you cook the others.

Serving Suggestions:

This Piadina with sausage and braised onions pairs beautifully with a light salad or your favorite side dish. It’s delicious for a cozy dinner with a glass of white wine or a refreshing beverage of your choice.

Tips:

  • If you prefer a lighter version, feel free to replace the sausage with chicken or turkey sausage.
