U’ Funnateglie – Italian Sausage and Vegetable Medley with Eggs

Ingredients:

Red bell peppers 400g
White onions 100g
Cherry tomatoes (datterini) 400g
Italian sausage links 4
Fresh chili pepper ½
Extra virgin olive oil As needed
Fine salt As needed
Fresh basil As needed
Eggs 4

Instructions:

  1. Prepare the Vegetables:
    Start by peeling the white onions and slicing them into thin rings. Then, take the red bell peppers, remove the tops and seeds, and slice them into strips. Cut the cherry tomatoes in half.

  2. Cooking the Base:
    In a large pan, drizzle some extra virgin olive oil and heat over medium. Add the sliced chili pepper and onion. Once the onions soften and begin to turn golden, add the cherry tomatoes and bell peppers. Season with salt and stir in a few fresh basil leaves.

  3. Simmer the Vegetables:
    Let the vegetables cook for about 25 minutes, stirring occasionally. If the sauce reduces too much, add about 30g of water to loosen it up. The vegetables should be tender and flavorful.

  4. Adding the Sausage and Eggs:
    While the vegetables cook, grill or pan-fry the sausage links until browned and cooked through. Cut them into chunks and add them to the vegetable mixture. Create small spaces in between the sausage pieces and carefully crack an egg into each space. To avoid breaking the eggs, crack them first into a small bowl before placing them in the pan.

  5. Cooking the Eggs:
    Cover the pan with a lid and cook on low heat for 5-7 minutes, or until the eggs are cooked to your preferred consistency.

  6. Serve and Enjoy:
    Once the eggs are ready, remove the pan from the heat. Sprinkle with fresh basil leaves and serve warm. This dish pairs wonderfully with crusty bread or as a stand-alone meal.


Notes:

  • The key to this dish is the perfect balance of soft eggs and tender vegetables. If you prefer your eggs more well-done, allow them to cook for an additional few minutes under the lid.
  • This dish can be adjusted with your choice of sausage or vegetables depending on your preferences.
