Instructions
-
Prepare the Vegetables and Sausage:
Start by cleaning and deseeding the yellow bell peppers. Cut them into thin strips. Next, remove the casing from the sausage and break it into small, roughly 2 cm pieces. -
Cooking the Sausage:
Heat a non-stick frying pan over medium heat. Add the sausage pieces and cook until browned and fully cooked, breaking them up further as they cook. -
Cooking the Peppers:
In the same pan, add the sliced yellow peppers, season with salt, and cover with a lid. Allow them to cook over low heat for about 10 minutes, until softened. -
Infuse with Herbs:
While the peppers cook, add fresh sage leaves, thyme, and a few sprigs of rosemary to infuse their aroma and flavor into the vegetables. -
Make the Creamy Pepper Sauce:
Once the peppers have softened, use a spoon or immersion blender to puree them into a smooth sauce. Set aside for later use. -
Prepare the Feta:
Break the feta cheese into small crumbles with a knife or your hands, depending on the texture you prefer. -
Combine the Ingredients:
Return the cooked sausage to the pan and heat through. Add the creamy pepper mixture, stirring to combine. If the sauce is too thick, add a small ladle of pasta cooking water to loosen it. -
Cook the Pasta:
While preparing the sauce, cook the rigatoni in a large pot of salted boiling water according to package instructions, usually about 10-12 minutes. Once cooked al dente, drain, reserving some of the pasta water. -
Combine the Pasta and Sauce:
Add the cooked pasta to the pan with the sausage and pepper sauce, tossing everything together. If needed, add a little more pasta water to reach your desired sauce consistency. -
Finish the Dish:
Sprinkle the crumbled feta on top of the pasta, tossing gently to incorporate. Season with freshly ground black pepper and additional salt, if needed. -
Serve and Enjoy:
Serve the pasta hot, garnished with fresh herbs if desired. Enjoy your delicious pasta with peppers, sausage, and feta!
This hearty and flavorful pasta dish brings together the sweetness of peppers, the richness of sausage, and the creamy saltiness of feta. Perfect for a weeknight dinner or a weekend treat, it combines savory elements with fresh, aromatic herbs to create a satisfying, comforting meal.
