Ingredients:

Quantity Ingredient
1 Mild Italian sausage
1 can Italian stewed tomatoes
1/4 cup Tomato paste
1/4 cup Fresh parsley
12 oz Spaghetti
1/4 cup Parmesan cheese

Instructions:

  1. Prepare Sausages: Cut sausages into 1/2″ thick slices. (I find it is a lot easier to do this if the sausages are frozen).

  2. Brown Sausages: Cook over medium-high heat, turning once, for 5 minutes or until browned. Drain off fat.

  3. Prepare Tomato Sauce: In a food processor or blender, puree tomatoes until smooth; pour into the skillet. Add tomato paste and bring to a boil. Reduce heat to medium and simmer for 7 to 10 minutes or until thickened.

  4. Add Parsley: Stir in chopped fresh parsley into the sauce.

  5. Cook Spaghetti: Meanwhile, in a large pot of boiling salted water, cook spaghetti for about 8 minutes or until tender but firm. Drain and return to the pot.

  6. Combine: Add the prepared sauce to the cooked spaghetti; toss to coat evenly.

  7. Serve: Sprinkle with grated Parmesan cheese and serve hot.
