Stir-Fried Long Beans with Tofu and Quail Eggs

Ingredients:

  • 10 long beans, cut into bite-sized pieces
  • 12 pieces of firm tofu, cubed
  • 10 quail eggs, peeled
  • For the Seasoning:
    • 6 shallots, finely sliced
    • 3 cloves garlic, minced
    • 5 red chilies, sliced
    • Salt and sugar, to taste
    • 2 tablespoons oyster sauce
    • Oil for sautéing

Instructions:

  1. Prepare the Ingredients: Begin by cutting the long beans into bite-sized pieces and washing them thoroughly. Set aside.

  2. Sauté the Aromatics: Heat a generous amount of oil in a pan over medium heat. Add the sliced shallots, minced garlic, and sliced red chilies. Sauté until fragrant and the shallots become translucent.

  3. Cook the Long Beans: Add the long beans to the pan. Stir-fry for a few minutes, ensuring the beans are well coated with the aromatic oil. Continue to cook until the beans are slightly tender but still crisp.

  4. Add Tofu and Quail Eggs: Incorporate the cubed tofu and peeled quail eggs into the pan. Gently toss the ingredients to combine.

  5. Season the Dish: Pour in a small amount of water to help the flavors meld together. Season with salt and sugar according to your taste preference.

  6. Finish with Oyster Sauce: Allow the dish to simmer until the beans are fully cooked and the flavors are well integrated. Stir in the oyster sauce, and adjust the seasoning if needed.

  7. Serve: Once the beans are tender and the sauce has thickened slightly, remove from heat. Serve warm, and enjoy this flavorful and satisfying dish.
