Stir-Fried Water Spinach with Tuna Sausage and Onions

Ingredients:

  • 2 bunches of water spinach (kangkung), cleaned and trimmed
  • Tuna sausage, cut into pieces (amount as desired)
  • 2 tablespoons fish sauce
  • Water (enough to cook)
  • Fine salt, to taste
  • Granulated sugar, to taste

For the Grated Ingredients:

  • 1 large onion, peeled and cleaned
  • 5 cloves garlic, peeled and cleaned

Instructions:

  1. Prepare the Ingredients: Begin by peeling and cleaning the onion and garlic. Use a cheese grater to grate both the onion and garlic finely. Clean and trim the water spinach, ensuring it is well washed.

  2. Sauté the Aromatics: Heat 2 tablespoons of cooking oil and sesame oil in a pan over medium heat. Add the grated onion, garlic, and tuna sausage pieces to the pan. Sauté until the mixture becomes fragrant and the tuna sausage is cooked through.

  3. Add Water and Fish Sauce: Pour approximately 200 ml of water into the pan and bring to a boil. Once the water starts to simmer, add the fish sauce.

  4. Cook the Water Spinach: Add the cleaned water spinach to the pan. Allow it to cook until it begins to wilt.

  5. Season the Dish: Season with fine salt and granulated sugar to taste. Stir well to ensure the seasonings are evenly distributed. Let it simmer for an additional 5 minutes.

  6. Finish and Serve: Once the water spinach is wilted and the flavors have melded, turn off the heat. Serve the dish warm and enjoy the vibrant flavors of this simple yet delicious stir-fry.
