The Lady’s Cheese Biscuits & Garlic Butter

🥖 Description:
Straight from The Lady & Sons restaurant in Savannah, Georgia, these cheese biscuits are simply incredible! They’re so popular that at my former workplace, whenever we had The Lady & Sons cater lunches for training seminars, these biscuits were always the first to vanish. Originally featured in a recipe that ran in the Savannah Morning News, these biscuits are a true Southern delicacy. While the recipe calls for cheddar cheese, I prefer using sharp cheddar for that extra kick of flavor. If you opt to make jumbo biscuits using an ice-cream scoop, this recipe will yield about four generously sized biscuits.

Instructions:
-
Preheat oven to 350 degrees Fahrenheit.
-
In a mixing bowl, combine self-rising flour, baking powder, and sugar using a fork.
-
Add vegetable shortening to the mixture and incorporate it using a fork or pastry blender until the mixture resembles coarse cornmeal.
-
Stir in cheddar cheese until evenly distributed throughout the mixture.
-
Gently incorporate buttermilk into the mixture until just blended, being careful not to overmix.
-
Using a tablespoon or an ice cream scoop for jumbo biscuits, drop spoonfuls of the dough onto a well-greased baking sheet, leaving some space between each biscuit.
-
Bake in the preheated oven for 12 to 15 minutes, or until the biscuits are golden brown and cooked through.
-
While the biscuits are baking, prepare the garlic butter. In a small saucepan, combine butter and crushed garlic cloves over medium heat.

Cook until the butter absorbs the garlic flavor, being careful not to allow the garlic to brown.
-
Remove the saucepan from heat and discard the garlic cloves.

Once the biscuits are done baking, brush them generously with the prepared garlic butter.
