Instructions
To prepare Haldi Ki Sabzi, start by heating oil in a kadhai (wok). Once hot, add the grated ginger, turmeric, and finely chopped green chilies. Sprinkle a little salt and cook for about 4 to 5 minutes until the turmeric softens.
In a separate bowl, combine the beaten curd, gram flour, salt, coriander powder, black pepper powder, and garam masala powder. Whisk the mixture thoroughly until smooth and set aside.
Once the turmeric is tender, gradually stir in the yogurt mixture, continuing to mix until the sabzi thickens, which should take about 5 minutes.
After the turmeric is cooked through, turn off the heat and transfer the dish to a serving bowl. Garnish with fresh coriander and mix well.
For the tempering, heat ghee in a small pan. When the ghee is hot, add the mustard seeds and allow them to splutter. After the mustard seeds crackle, toss in the curry leaves, stir briefly, and then turn off the heat.
Pour this flavorful tempering over the turmeric sabzi and mix gently to combine. Serve your Haldi Ki Sabzi warm alongside Panchmel Dal, Phulka, and a refreshing Masala Chas for a delightful meal.
