Ingredients:

  • 1 1/2 cups dried black beans
  • Water
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons salt

Instructions:

Preparation Time Cooking Time Total Time
10 minutes 3 hours 3 hours 10 minutes
  1. Preparation:

    • The night before cooking, wash the black beans thoroughly and remove any debris or impurities.
    • Place the cleaned beans in a large mixing bowl and cover them with water, ensuring there’s about 4 inches of water above the beans. Let them soak overnight.
  2. Cooking:

    • The next day, drain the soaked beans and transfer them to a 6-quart heavy kettle or Dutch oven.
    • Add enough water to cover the beans by about 2 inches.
    • Cover the pot and bring the beans to a boil over medium-high heat.
    • Once boiling, reduce the heat to maintain a steady simmer. Allow the beans to cook for approximately 2 1/2 hours or until they are just tender, stirring occasionally.
    • Add more water as needed during cooking to ensure the beans remain submerged. Ideally, at the end of cooking, there should be just enough water to cover the beans.
  3. Seasoning:

    • Once the beans are tender, remove the pot from the heat.
    • Stir in the onion powder, garlic powder, and salt, ensuring they are well incorporated into the beans.
    • Allow the seasoned beans to cool down to room temperature.
  4. Storage:

    • Scoop 2 cups of the cooked bean mixture into each freezer bag.
    • Try to distribute an equal amount of liquid along with the beans into each bag.
    • Remove excess air from the bags and seal them tightly.
    • Label the bags with the date and contents, then place them in the freezer.
  5. Usage:

    • When ready to use, remove a bag of frozen beans from the freezer.
    • Thaw the beans in the refrigerator for about 24 hours, or thaw them quickly using the microwave according to the manufacturer’s instructions.
    • Alternatively, if you’re in a hurry, you can run warm water over the bag to release the contents, then transfer the frozen beans to a saucepan and heat them over low flame until thoroughly heated.
  6. Serving:

    • Each bag yields approximately 4 servings, making it convenient for portioning out for meals.

Tips:

  • For added flavor, consider adding a bay leaf or a sprig of fresh thyme during the cooking process.
  • Customize the seasoning to your preference by adding chili powder, cumin, or smoked paprika for a smoky kick.
  • These prepared black beans can be used in a variety of dishes such as burritos, tacos, soups, salads, or simply served as a side dish with rice.
